Family Cookie Time– Train Table Cookie Recipe

Today was one of those lazy summer days where nothing much gets accomplished, but lots of memories are made.  Swimming, arts and crafts, and cookie making made up our lazy Sunday.  Making cooking with children is quite an art form and messes are pretty much guaranteed, but that is what creates the fun memories.

So, after all was baked and cleaned up, we gave the kids some fresh cookies.  Next time I checked on them, I discovered this:

Okay, so the cookies were not a hit with the kids, but they are apparently good for train table accessories.  All that matters, is that we had fun, made a mess, and I honestly like the cookies.  
Here is the recipe:
Train Table Oatmeal Raisin Cookies
1/2 cup, plus 6 TBSP butter, softened
3/4 cup brown sugar
1/2 cup white sugar
2 eggs
1 TSP vanilla
1 1/2 cups flour
1 TSP baking soda
1 TSP cinnamon
1/2 TSP salt
3 cups uncooked old fashioned oats
1 cup raisins
*Heat oven to 350*.  In large bowl, beat butter and sugars together until creamy
*Add eggs and vanilla, beat well.
*In a separate bowl, combine flour, baking soda, cinnamon, and salt.  
*Add flour mixture to the wet ingredients.  Mix well.
*Add oats and raisins and mix again.
*Drop dough onto cookie sheet in rounded tablespoons.
*Bake 8-10 minutes, or until golden brown around edges.  Cool on wire racks.
Enjoy or put on a train table for decoration.
