Watermelon Mojitos: Recipe

Watermelon mojitos for the adults and watermelon popsicles…
perfect for summer!

Today, I want to share the recipe for the Watermelon Mojitos
 
watermelon mojitos
(makes 4 servings)
 
*3 cups of watermelon (chopped)
*approximately 30 mint leave (chopped)
*mint for garnish
*4 tablespoons white sugar
*2 limes
*8 ounces rum
*2 cups ginger ale
*ice
 
(you can always omit the rum if you want it to be kid friendly)
Mix mint leaves and sugar in a bowl.

Add juice from the 2 limes and use a spoon or a fork to mash it all together…. do it until the sugar dissolves.

Pour the lime/mint/sugar mixture over top of your watermelon.
Mix well.

In a large pitcher, add ice cubes, ginger ale, rum and add your watermelon mixture.   Stir and add some extra mint for garnish.

Serve on a tray and pour into individual glasses.
